There's a huge community to be found in places like Reddit, some great podcasts and so many helpful resources to learn from. Google email and M365 are cheap enough that it's worth it to pay them to not have to maintain DNS records (SPF, DKIM, DMARC, etc) and an email server. Most people, even in these communities, will absolutely tell you to avoid self hosting email at all costs, and that's totally understandable.I assume you already have reasonably high speed internet to enable access to your server when you're not at home. 20MB up and down are, in my opinion, the minimum necessary to do almost anything ($20-$50, depending on ISP). Obviously, the higher your bandwidth, the better! (Average ~$75 for 200MB, in my experience). Hardware

Before going vps, consider something like tailscale. Although not self hosted, it does use wireguard and maintains a sudo network that's peer to peer using wireguard. VPS is nice for the geek cred and learning though. But you don't need it.
